🍎 Apple Fritter Pancakes

All the cozy vibes of an apple fritter, flipped into a stack of fluffy pancakes.

Ingredients:

For the Apples:

  • 1 large apple, peeled and diced (Honeycrisp, Gala, or Granny Smith work well)

  • 1 tbsp butter

  • 1 tbsp brown sugar

  • 1/2 tsp cinnamon

For the Pancake Batter:

  • 1 cup all-purpose flour

  • 2 tbsp sugar

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 3/4 cup buttermilk (or use regular milk + 1 tsp vinegar)

  • 1 egg

  • 2 tbsp melted butter or oil

  • 1/2 tsp vanilla extract

Instructions:

1. Cook the Apples:

In a small skillet, melt 1 tbsp butter. Add diced apples, brown sugar, and cinnamon.
Cook for 3–4 minutes, until soft and caramelized. Set aside.

2. Make the Batter:

In a bowl, whisk together dry ingredients (flour, sugar, baking powder, baking soda, salt, cinnamon).
In another bowl, mix wet ingredients (buttermilk, egg, melted butter, vanilla).
Combine wet and dry, stirring until just mixed.
Gently fold in the cooked apples.

3. Cook the Pancakes:

Heat a greased skillet or griddle over medium heat.
Scoop batter (about 1/4 cup per pancake) onto the pan.
Cook 2–3 minutes until bubbles form, then flip and cook another 1–2 minutes until golden brown.

4. Serve Warm

Top with powdered sugar, warm maple syrup, or a drizzle of vanilla glaze for extra fritter vibes.
